This was the end of the staged performance. We then had a 'hangi' cooked food - this is the traditional Maori way of cooking food in baskets below ground on pre-heated flat stones. The baskets are covered in matting then earth and left for about 2 - 3 hours. Our feast comprised of lamb, chicken, potatoes, kumara (sweet potatoes), carrots, stuffing and bread followed by steam pudding and kiwi fruit pavlova (not subject of 'hangi' cooking method).
The evening concluded with a sing song and karaoke on the bus home - each nationality on the bus had to sing a song associated with their country. We gave a rendition of Flower of Scotland. A great evening was had by all.
